After a fall of enjoying the beautiful colors and long walks through the woods, the time has come to start planning your holiday celebrations and getaways. It is with the many families in mind that grace us with their presence during the Holidays, that we have put together a choice of great packages and activities that will help to create treasured memories.

Le Grand Lodge was honored to receive third prize for its Floral Decoration. A prize that was awarded by the Mont-Tremblant Chamber of Commerce, for which we are most proud and we thank all those that put their magic touch to all our flower beds this summer. For next year, we have our eye on the top prize!

A Season all about Fine Dining

Our chef David is busy fine tuning some new dishes for the winter menu with delectable surprises that are sure to surprise and enchant you. Look for one of his new creations in the recipe section below.

While we are on the subject, Le Grand Lodge had the honor of hosting a delegation from Air France last month, and of the many favorable comments received from them, all mentioned how much they enjoyed the excellent dishes at Chez Borivage. Congratulations to David and his team!

As promised, we had a chance to speak with Mrs. Tessier and her family about winning the grand prize in our 10th Anniversary contest and we have some pictures to share with you as well in a special section below.

Cut the figs in 4. In a saucepan, bring the orange juice, sugar and orange zest to a boil. Add the figs and let simmer for a few minutes. Place the figs in individual serving plates and sprinkle with the pistachios.

Sabayon preparation: Place the egg yolks in a stainless steel bowl. Add the sugar and wine. Start by whisking the mixture then place it in a bain-marie while continuing to whisk until it thickens and becomes creamy. Remove from the heat and spread evenly over the figs and pistachios.

Place it under the broiler to give it a nice color or use a torch. Serve hot with a glass of ice wine or champagne.

Malgache Coffee

This month, you will find Yves, your favorite bartender, polishing the flambé glasses; winter must be around the corner…

Add 1 oz of dark rum in a tall glass frosted with brown sugar.

Flambé the rum until the sugar melts then add:
• 6 oz of hot, strong coffee
• Whipped cream and vanilla sugar (add vanilla pulp to white sugar)

Then flambé ½ oz of Galliano (an Italian vanilla liqueur) and pour over the whipped cream.

Serve immediately.
