Winds of change
On a more personal note, I would like to announce that as of next month’s issue, this column will be written by my successor. After four years at the helm of Le Grand Lodge, I have accepted a new position. The next one takes me to Romania as of mid-June to head a Transylvanian hotel group. I cannot express how much I have enjoyed these past years at Le Grand Lodge and how much I will miss my colleagues and guests.
Thank you for your confidence and I look forward to being of service to you once again.

Chef David’s Recipe Corner |

| This month, our chef David has a simple and easy recipe for some mouthwatering truffles. |
|
| Amaretto Coffee Truffles |
|
|
|

200 g of milk chocolate |
|
 |
| • |
4 teaspoons of soft butter |
|
| • |
3 tablespoons of coffee |
|
| • |
2 tablespoons of Amaretto |
|
| • |
3 egg yolks |
|
| • |
3 tablespoons of cocoa powder |
|
|
|
| |
Melt the chocolate, butter, coffee and Amaretto in a bain-marie. Remove from the heat. Stir until the mixture is smooth then add the egg yolks. Mix well until the mixture is smooth again. Place in the freezer for 20 minutes so the mixture can harden.
With a spoon, scrape the chocolate and roll them in your hands to form small balls then dip into the cocoa powder. Store them in an air tight container in the freezer.

Yves, your favorite bartender has this classic cocktail recipe for you to enjoy during these nice hot summer days:
Royal Flush

1 1/2 oz Crown Royal |
| • |
1 oz Peach Schnapps |
| • |
1/2 oz Chambord (raspberry
liqueur ) |
| • |
1 oz cranberry juice |
In a tall shaker glass, pour all the ingredients plus some ice cubes. Mix well, pass through a sieve then pour into a chilled cocktail glass.
