February is of course synonymous with Valentine’s Day. | Special news announcement - Earthquake in Haïti |
Le Grand Lodge is offering their support to the victims of the January 12th earthquake in Haiti by partnering with the Canadian Red Cross in the following ways:

Le Grand Lodge will donate $5 to the Red Cross for each stay starting Friday, January 15th and running through for a one month period. |

Guests upon check out will be informed by the reception desk of the donation and invited to match or surpass our contribution by making their own voluntary contribution that will be processed through their hotel charges. |
| • |
100% of all donations and contributions will be given to the Red Cross at the end of the one month period. |
|
May I add that the Haitian community is very active, particularly in the Montreal area, and is well known for their contribution to the hospitality industry.

Chef David’s Recipe Corner |

Chocolate Pots de crème with Sweet and Salted Peanuts |
|
| Ingredients |
|
| • |
125 ml of milk |
| • |
125 ml of cream |
| • |
1 tablespoon of sugar |
| • |
3 egg yolks |
| • |
1 sheet of rehydrated gelatin |
| • |
175 g of top quality 40% milk chocolate |
|
|
|
In a saucepan, bring to a boil the milk, cream and sugar.
In a round-bottomed mixing bowl, lightly beat the egg yolks while gradually pouring the hot liquid over the eggs.
Return the mixture to the saucepan and cook at medium heat, mix constantly until the cream coats the back of a spoon. Remove from the heat, add the gelatin and mix.
Place the chocolate pellets in a tall container and pass the heated mixture through a chinois (conical strainer) over the chocolate to melt it. Let it stand. Emulsify the cream with a mixer making sure the blade is completely immersed into the chocolate mixture to avoid creating bubbles. Pour the cream into individual glasses and refrigerate.
• 1 egg white
• 1 cup of peanuts
• 3 tablespoons of sugar
• 1 teaspoon of fleur de sel
Whip the egg white until fluffy. Add the peanuts and mix until well coated. Sprinkle with the sugar and salt, then place on a silicone lined cookie sheet and bake for 8 minutes at 350 F.
Garnish the chocolate cream with the peanuts when serving.

Whisky Bar Recipe
Your favorite bartender, Yves has two suggestions to offer you this month: a hot cocktail to stay warm during the cold winter winds or a refreshing punch for those enjoying some time on the beach.
To fend off the wintery cold
In a tall glass:

½ oz of white crème de menthe |
| • |
1 oz Vodka |
| • |
1 teaspoon of sugar |
Then fill the glass with your favorite tea (for instance, Earl Grey or Irish Breakfast). Serve immediately with tea biscuits.
While enjoying the tropical sun
In a tall glass :

4 or 5 ice cubes |
| • |
A dash of grenadine |
| • |
1 ½ oz of old rum |
Fill with your favorite tropical juice (such as pineapple, mango, passionfruit or a savvy blend of your own creation).
Add a dash of club soda, 2 straws and garnish with slices of fresh fruit (perhaps a small bamboo umbrella might suit your fancy!)
