Spring has sprung early! |

I had predicted it last month : « … don’t wait … it looks as though the spring skiing season will be shorter than usual. » However what a surprise to see Spring 2010 off to such an early and roaring start!
As I write these lines, the radiant sunshine has, alas, melted away the skating rink and the Beaulieu trail. Your favorite bartender, Yves, passionate golfer beyond belief, has already stored his snowboard for the season and pulled out his golf bag. It is only a matter of days before his first swing… |

Golf : Preparations for the
Classic underway
Speaking of golf, Le Grand Lodge is organizing its second annual Classic to benefit the Centre de Patinage Artistique de Mont Tremblant. Friday, June 18 has been set for this notable event. Meetings & Conventions : Ideal setting, top facilities
April at Le Grand Lodge is when we see the return of many corporations and associations gathered for training sessions, teambuilding or other group meetings. Again this year, many of our friends will leave behind their suits and high heels and trade them in to meet in the comfort of Le Grand Lodge. Chef David’s Recipe Corner
Chef David has a light, tasty and easy to prepare dessert recipe for you to try this month.

| Sake and Ginger Litchi Flan with Blood Orange Sauce |

16 fresh litchis |
|
 |
|
| • |
3 eggs |
| • |
125 ml of milk |
| • |
30g (2 tablespoons) of sugar |
| • |
15ml (1 tablespoon) of Sake |
| • |
A few leaves of fresh coriander |
| • |
5g (1 teaspoon) of fresh ginger, minced |
| |
| Orange Sauce |
| • |
125 ml of blood orange juice |
| • |
Zest of one orange |
| • |
30g (2 tablespoons) of sugar |

Peel then cut the litchis in half. Remove the pit and dice.
In a bowl, place the eggs then add the milk, sugar, Sake and ginger. Whip together for a few minutes. Pour the mixture into individual ramequins.
Add the diced litchis and bake in a bain marie for 25 minutes at 350 F (180 C). Remove from the oven and let cool.
To make the sauce :
In a saucepan over low heat, pour all the ingredients, bring to a boil then simmer for 10 minutes. Cool.
When ready to serve, remove the flans from the ramequins and drizzle with the orange sauce. Garnish with the coriander leaves.

Whisky Bar Recipe
Yves, your favorite bartender suggests this easy recipe with a fun twist to it (plus you get to use the bottle of blue Curaçao that has been sitting in your liquor cabinet since last Father’s Day…)
Ingredients

2oz of Blue Curaçao |
| • |
1oz of Vodka |
| • |
½ oz of Gin |
| • |
½ oz of white Rhum |
| • |
Ice cubes |
| • |
A dash of Sprite |
| • |
Zest from one lemon |
In a shaker glass, add the first 5 ingredients. Mix well and pass through a sieve into a Martini type of cocktail glass. Add the dash of Sprite to make it effervescent.
Garnish with the lemon zest.
